A PEEK IN THE KITCHEN
Recipe makes two circles and 16 scones. You can also substitute apricots, or dates for the cranberries. CRANBERRY~WHITE CHOCOLATE ~ WALNUT SCONES 2 cups all purpose flour 1/3 cup sugar 2 teaspoons baking powder 1/2 teaspoon salt 1/4 cup (1/2 stick) butter, chilled 1/2 cup heavy cream 1 large egg 1 teaspoon vanilla 1 cup white chocolate chips 1 cup dried cranberries 1 cup broken walnut pieces In a large bowl stir together flour, sugar, baking powder, salt. Cut butter into 1/2 inch cubes and distribute over flour mixture. With a pastry blender cut butter until the mixture resembles course crumbs. Add chips, nuts and cranberries and mix well. Make a hole in the center of the mixture. In a small bowl mix together the cream, egg and vanilla. Add cream mixture to flour mixture and knead until combined.
