GOT A MINUTE OR TWO

I took a break and didn't do a cooking class in the summer.  Several ladies ask when we would have the next one, so Wednesday we had our first one for Fall.  Pumpkin muffins, and Sausage Egg Casserole for the menu. The casserole was the best I've every made.  Got the recipe on line and will share it real soon.     The pumpkin muffins were OK, but I was disappointed as they were really dense, and not as moist as I had hoped.  I may try to add more applesauce or an extra egg next time.  The strudel topping was especially good.  When I correct the recipe, I will post it. Had a nice group, and two new ladies.  I was sporting my Fall top and apron.  We are all enjoying the casserole.
