GOT A MINUTE OR TWO

  Cinnamon Sour Cream Coffee Cake I promised Linda the recipe for the Cinnamon Sour Cream Coffee cake.  Sometimes I make it in a casserole dish (like above) and sometimes I make it in a loaf pan.  It also will make three small loaves. Cinnamon Sour Cream Coffee Cake 2 cups all purpose flour 1 1/2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1 cup sugar 1/2 cup shortening 2 eggs 1 cup sour cream 1/4 cup milk or half/half 1/2 c chopped nuts (optional) 1/4 cup sugar 2 teaspoons cinnamon Directions: In a mixing bowl combine flour, baking powder, soda and salt.  Set aside.  In a large mixer bowl cream together 1 c. sugar and shortening till light and fluffy. Add eggs and vanilla and beat well.  Blend in sour cream and milk.  Add flour mixture and mix well. Grease and flour your dish or loaf pan.  Spread 1/2 of the batter in he dish.  Sprinkle the 1/4 c sugar and cinnamon mixture over the batter.  Add the remaining bat...

  Saturday was a "God Blessed Day".  Our dear friend Tom Gehay passed away and his Memorial Service was Saturday in Santa Barbara.  That's about a 2-hour drive.  My dearest was feeling good so our daughter Michel, and son Myk took us to the service.  The 2-hour drive turned into a 4-hour drive due to unexpected traffic.  But we made the service and was able to visit with Tom's wife and daughters.  It was marvelous time of reunion.  I love the above picture of our son helping Dad for a restroom break.  Later, on the way home we stopped and had a delicious Mexican dinner.  Myk is the comedian of the family and made sure Dad got a kiss to build a dream on...HaHa. God orchestrated the entire day and it was a day we will never forget.  Praise God from whom all blessing flow!!

  I know you have heard the expression "Egg on your face", but how about "Face on your egg." HaHa The way I know if I have hardboiled eggs in the refrigerator, I give them faces!!  This is what you do when you can't think of anything to post about!!

  I usually make my Cinnamon-Sour Cream Coffee cake in a large pie plate or casserole dish but decided to put a "twist" on it and make in in a large loaf pan. This is one of our families' favorites.   Did you notice my cute little plaque with the rolling pin??  "Just Roll with It"?  It's the little things in my kitchen that make me smile. In another life, I would have loved having a "Bed and Breakfast" on a large piece of land.  Room for a vegetable and herb garden, berry bushes and grape vines, lots of fruit trees and perhaps a few chickens for the eggs.  OK, enough day dreaming!!  Think I'll have a slice of my coffee cake.

  A few days before Jill and Tristan's visit the pool at Villa was finally opened after two years due to Covid.  I wasn't brave enough to get in the pool with Tristan and Jill, but the weather has changed, and we are in the high 80's and 90's.  Not sure I will fit in my bathing suit!   May have to go shopping, but I'm sure looking forward to that dip in the pool, swimming a few laps and soaking up the sun! What's your weather like?

  Amazing what you can find at "Marshalls".  5 Bean Soup in a plastic packet for $3.99.  The packet includes beans and seasoning.  Add 8 cups water, one onion chopped, 1/4 c olive oil, one can of diced tomatoes. Sauté the onion in the oil add the other ingredients and bring to a boil.  Lower heat and cook for one hour. This is the plastic packet it came in. The one I will try next, is the Vegetable Lasagna soup.  This one only requires the water, and tomato sauce.  Will be interested to see if it's as good at the 5-bean soup. I love easy recipes that taste good!
