FINALLY!!!



FINALLY ~ after years of trying to make the perfect lemon meringue pie, I did it!!  I've never had trouble making fruit pies, custard pies or cobblers, but "cream" pies never seem to meet my expectations.  Last week at our "cousin reunion" I was given a large bag of lemons.  After drinking gallons of lemon water, I decided I would try again. 


This time using a recipe from my "Better Homes and Gardens" All-Time Favorite Pies book.

Not sure what I did different this time ~ but the pie and the meringue came out perfect. The test to the perfect lemon pie is if my dearest's fork slides effortlessly through the meringue and filling. IT DID!! Yeah!

The filling set up and the crust was flaky ~ for someone who bakes all the time and camps in the kitchen, this was a Milestone day for me!!!  Finally a lemon meringue pie that met my expectations, and my dearest was ever so pleased.  Win~Win.

  4. It looks wonderful. My Mom use to make the most wonderful Lemon Meringue pies, but I wanted Chocolate. How I wish I could have one of her lemon ones.

    1. You know Janet, I think Lemon Meringue is a "memory" food. Seems every one's mom made a good one, mine included. It was her signature pie and that's why I was so glad to make one like hers.

  7. This looks divine...I have never made a lemon meringue pie....It's one of Dave's favorites and I remember how my Dad loved it too.
    So glad your Dearest was happy with it. Maybe someday I can eat pie again.

  9. Wanda congrats!!! I know that feeling :) I tried a lemon meringue pie a few years ago and failed miserably...tried again last month and huzzah! Did it! It felt great. Yours looks so absolutely wonderful! :)

  10. I'm so proud of you! I love it when a recipe works so perfectly and your pie is beautiful. I was proud of myself today for making a chicken pot pie with homemade pie crust for the first time. I usually use the Pillsbury. It was so good, we are the whole thing!

    2. I guess I should have taken a picture because I was pleased with how it turned out. In mixing the pie crust, my mixing tool broke and I had to use a fork. I plan to make another pie soon with the new pie crust tool and will take a pic. I bet your pie was delicious. We ate the whole thing and I gave away the other one today.

  12. Your pie looks fantastic. Since I do not like lemon meringue I have never made one. But sure does sound hard. Isn't it nice when a recipe comes out even better than you expected?
