A CHICKEN IN THE POT AND A LOT MORE....


I've been just craving some chicken salad and not from "canned chicken".  I bought a plump whole chicken from the meat market around the corner and added some seasoning and rosemary.
 
 One good dinner with carrots and potatoes and the rest will go into making my chicken salad.

Chunked chicken, celery, dried cranberries, some mayo and seasoning.  Yes!  Just the taste I was craving.  Had it for lunch in a lettuce leaf.

 A little package ready for mail to Tristan.  As you can see from the picture below the boy loves to wear pajamas.  When we go out to the store or Library he changes clothes...the minute we get home... off come the clothes and back on the pj's.  I found a couple of pairs at Target and he loves stripes and frogs.  Win~Win.  Also found another little stuffed toy for his "Pooh" collection and a Pooh book.

 He's making his cinnamon rolls in his pajamas.  Then I introduced him to "aprons" and that was the beginning of something new.

A cartoon he loves came on, so he ran to the couch, apron and all.  I sure miss this little guy!! Grandma's little cooking partner.

    I agree. I, too, change into my jammies as soon as I get home. We could have sleepovers!
    That chicken looks so good. I have never roasted a chicken in my life. I know it's probably dead easy... but I just haven't.
    The chicken salad looks delicious. I used to make one years ago with chicken, celery, mayo, green onions, cashews, pineapple and a touch of curry powder. So good!

    1. Oh that sounds so good. I was out of nuts, and I usually add them. Love pineapple..will have to do that next time.

  3. I get hungry every once in a while for a good homemade chicken salad. I make mine like yours but throw cashews in just as I serve it (so they don't get 'soft').

    Your little Tristan is just darling. I have my little "pirate" tonight (at his house) and then he will be here tomorrow night and Saturday. Just love that age and I know you do, too. xo Diana

    1. I usually add nuts, but didn't have any and wasn't in a mood to get cracking with the bag of have of walnuts from our friends orchard.

  5. Jammies are the best...they're my favorite choice, too. haha.
    Chicken salad sounds yummy....I haven't made it since last summer. Need to put that on my list! You make it like I do!

    1. I'm a gown gal....have been forever, and I've been known to clean my house in my nightgown, and get into clothes in the afternoon. I was out of nuts, and I do like to add a few walnuts.

  6. Tristan is still reminding me of Austin who also loves to bake, and just a day or two ago I saw a picture of him popping bubbles outside in his Mickey Mouse pajamas.

    So glad you got to spend that time with him this year. What wonderful memories.

    Life in pj's what can be better? Nothing.
    He's going to be a baker just like you.
    That chicken dinner looks so good.
    Our dinner tonight was at Mimi's. We had a coupon for a free entree. Disappointed...our pot roast was so blah and tasted like it had been sitting for a while. should have stayed home and had chicken like you.

    1. I just hate it when I have a coupon, and the food doesn't cut the mustard!! Bummer. The chicken was good, but the chicken salad really hit the spot.
      Today I was really missing Tristan, so had to send him a Grandma Package.

  8. What a cutie! Maybe he'll be a chef or baker when he's older. :) When I was working, I always jumped into pajamas as quickly as I could and kept them on as long as I possibly could. Now I actually make myself get dressed and stay dressed for the day. :) Happy Friday!

  11. Tristan will be so happy to receive your goody box. I bet he misses you! I made chicken salad last week. The spring weather started me thinking about eating on the patio. I love the way you roast a chicken!

      I am a fan of Rosemary, and it grows here in the Villa. So I snip a few when I need them. Will be eating on the balcony soon. Weather is getting very lovely.
