EATING HEALTHY AND NOT


 Glazed boneless chicken thighs and fresh veggies!  A healthy dinner.

Not so much!  HaHa.  Blueberry strudel!  I had to make one.  This is what we are making at the cooking class at the Villa this month.  I had to make sure it would taste good.  Right?  Two versions.  This one is made with Bisquick and blueberry pie filling.  Also I make one with pie crust.  It's lighter and flaky, but the Bisquick recipe is very quick and easy.
Speaking of pie filling, the trick of pie filling on cottage cheese for lunch from Betsy's plan is so good.  Now I keep pie filling on hand.

  1. Starting Monday I am going back on my old food plan which I abandoned right after Thanksgiving. I had not eating sugar or sweets for a long time so it really screws my system up to be eating sugar again.

    1. January is a good month for beginnings. Everyone has to find what works for them, as not everyone's body works the same way. But less sugar is always good.

  2. I prefer protein and veggies and fruit and keep processed carbs to a minimum. One egg, bacon and a whole wheat muffin are a favorite lunch for me. I make the egg in this plastic "thing" in the microwave. My son gave it to me, it cooks the egg in 25 seconds.

    1. That's the key and its sensible too. I love eggs, and use them for lunch too many times. Will have to check out the microwave thing. I keep boiled eggs in the fridge.

  3. Dave and I try to eat just two meals a day.
    Lots of protein and fresh veggies. Works pretty good for us. This holiday time was too much of a temptation for my blood sugar...now it's back to serious business of no sugar and little "flour". I have got to get off this plateau!

  4. I am ready to start cleaning up my diet again. Two weeks of holiday food is more than enough. Back to almonds and apples for lunch (and maybe a spot of cottage cheese...).

  7. Usually just have two meals a day, but with my current plumbing issues I have to eat every few hours. Hoping to be able to include some more foods soon. The food restrictions are not fun.
    Love the look of both these plates. Yummm!

  12. I was going to try that cottage cheese and cherry pie filling. I had my mouth all set to taste this fabulous concoction when I saw that I opened up the wrong pie filling. I was so disappointed! Strawberry Pie filling was kinda bland. Hope you enjoyed yours.
