DINNER FROM MY OKIE ROOTS


When we were at my cousins, he fixed a dish of fried okra and butternut squash. (some garlic, salt and pepper.)  It was so delicious and brought back memories of my mom's cooking.

I had a package of the okra he had grown and given me in the freezer so today I made my own version.  I baked the butternut squash in the oven until tender, cooled and cut into cubes.  Dredged the okra in flour, salt, pepper and panko crumbs.  Cooked several slices of bacon and saved the drippings.

Fried the okra in the hot bacon drippings, added the squash and bacon pieces.  When okra was nice and crisp and squash was heated through it was ready to put on the place next to a chicken breast that had been cooking in the crock pot all afternoon.

It was a tasty dinner and a trip down memory lane.  What food takes you back to childhood?

  1. Doesn't this look a treat! Yum. And so colourful, too.
    I really liked my Mom's cooking and baking. Two things that take me back were a cheeseburger pie she used to make and her sugar cookies. I also loved some beautiful pink squares she would bake called cherry dreams. Although they were often accompanied by a sign that read, "For the church!" Sigh. :-)

    1. Oh I've had cheeseburger pie. HaHaHa...I must admit being a Pastor's wife for almost 50 years, i had to put little signs on food that was for the church potluck. Near the end of our ministry at that church (27 years) I would weaken and take a piece out for my dearest.

    2. My brothers and I would always salivate during the cooking/baking stage only to be thwarted when we saw the little signs. Laughing. But we were always eventually rewarded for our patience... once the groaning subsided. :-)

  2. For Dave I know it was his Mom's marrow dumpling soup. She was such a simple but oh so tasty cook.
    I just loved my Mom's pan fried pork chops with the drippings made into a simple gravy that we poured over noodles. It makes my mouth water just thinking about them.

  3. Chicken and dumplings and blackberry cobbler for dessert. My Mom was from Oklahoma so we had lots of Okie food.

    1. Two of my favorites...especially the blackberry cobbler. I was conceived in Oklahoma, but parents moved to CA when my mom was 6 months along,,,so I'me a native CA. with Oklahoma roots.

    I miss my Grandmas baked beans. I've tried to make them like she did, but they never taste the same.

  6. I didn't know you had Okie roots! I grew up in Oklahoma and my Mom served up a lot of this kind of food. Yummy! Loved just about anything that's fried. Oh dear!

    1. As I mentioned to Janet, I was conceived in Oklahoma, but my parents moved to California when my mom was 6 months along, and I was born in CA. But I do love that Okie cooking. My sister was 6 when they moved, so she had a little more time to grow up there.
