HOT WEATHER AND COOL LUNCHES


We have had several days of really hot weather, high 90's and threatening to get to 100 +.  Lunches have been cool.  Today it was a bed of lettuce a scoop of chicken salad on tomato slices surrounded by strawberries, pineapple and grapes.  A few crackers on the side.


Two of the new flavors we are enjoying are Dill Sea Salt Triscuits  with olive oil, and Rosemary olive oil rounds.

It won't be long until the crock pot will be full of steaming soups and stews, but for now...let's keep it "cool".

  1. I have not seen these dill crackers but I'm sure gonna look for them! Looking forward to cool weather meals! We're eating a lot of salads and sandwiches around here!

    1. Your lunches always make me hungry, Linda. You make great lunches and cool ones too. We are doing the sandwich salad routine too. We have been getting the sweetest pineapples and I'm so enjoying them.

  2. Those crackers look delicious and the salad was almost too pretty to eat. I live on a low fiber diet so I will just have to enjoy the box! We are happy to start cooling down at night here in the ozarks and anxious to see our trees change colors. This weekend is full of fall festivals around our corner of southwest missouri.

  4. Oh it has been rather toasty for us here in Diego town tho today was a bit slightly cooler and not as toasty, just in the upper 90's for us...our weather station says it is to be cooling down for the up coming week. Yeah well I hope so.

    We also been eating lots lots and lots of salads here ourselves and boy is my doctor ever so happy with the wieght I had lost. Keep cool and enjoy some ice cream too.

  9. Fall is definitely in the air here...infact I have on long pants and a sweatshirt. I may be overdressed.....I get cold much easier these days. Right now I am making soup do tomorrow I can take the day off. the sun is brightly shining and it looks so pretty out. We're going to warm up next week....more to my liking.

  10. Oooooo - scrumptious! And so festive looking. It has cooled down here quite significantly, which is fine by me. Although I wish we could find a happy medium between 95F and 50F.
