FROM THE KITCHEN


Last night I combined two of my favorite Italian dishes.  Lasagna and Eggplant Parmesan.  I had a few lasagna noodles, a little hamburger and Ragu sauce, a fresh eggplant and some spinach.

First I dipped the sliced eggplant in milk and panko crumbs and browned in a little olive oil.  Drained on a paper towel.  Then I layered meat sauce, noodles, fresh spinach and provolone cheese, another layer with the eggplant. finished off with meat sauce and provolone cheese....the result...Two favorites in ONE! 

This morning was in the mood for some Sour Cream Cinnamon Bread...Had all the ingredience, so made a couple.


It just looked nice on the table next to the Pumpkin Soup Tureen.  It was only there long enough for a quick picture.  Then I enjoyed every bite while it was warm with a dab of butter.  Mmmm.

    Do you know who Charles Krauthammer is? We're going to hear him speak tonight....should be very interesting.

    1. Oh Betsy, we watch him every day on FOX. I think he is one of the smartest men around and so savy on political issues...I would love to be a fly on your shoulder...I take that back...a butterfly. You are going to have such a great time. I will be excited how he is in person.

  4. Oh my!!! You can whip up gourmet meals at the drop of a hat!!! I can tell you are loving fall just as much as I am! It could be a little cooler down here - it was 96 today! The cooler weather WILL come and that just gives me one more thing to look forward to! Flannel sheets and a sweater!!!!

    1. It was one of those got a few things....what can Ido with them. It really turned out better than I expected. I was looking forward to leftovers, and then my granddaughter stopped by and I sent it home for her and her hubby. Will have to think of something else tonight...HaHa

  5. Yum! I think you should call it parmesagna!
    Is that green plate one of the ones you snapped up at the thrift shop? It's lovely.
    And that loaf... I can smell it from here.

    1. Thanks for giving my concocktion a name. I like it. "Parmesagna"...Maybe I should tell Olive Garden Cafe...HaHa. The bread turned out better than usual..think it was that extra baking powder I put in. Wish you were here for a slice.

  9. Sour cream cinnamon bread? I've never heard of it but sounds yummy. I had a chocolate cake Dunkin Donut this morning for breakfast and I'm still on my cup of coffee. Yummmmm.

    1. Now I think everyone should have dessert for breakfast. Love Dunkin Donuts. This recipe I used I call a bread if I bake it in a loaf pan, and coffee cake if I put it in a deep dish pie pan.
