NOT YOUR NORMAL QUICK BREAD


I wanted to make something that would last for my dearest while I'm on my trip so he could have something sweet with his coffee.

A quick bread would be good, as I could freeze half of it and he could work on the other half.   The problem was I didn't have any bananas, or any other fruit on hand.  Found a couple small zucchini  in the refrigerator, a handful of raisins and a few pecan pieces.  That doesn't sound like a tasty combination....but it turned out really nice and moist and very tasty ~ with a little drizzle of course.

The edges are a little crisp (which I like) but it's because the apartment oven has never baked at the degree it's set.  I've had to adjust the heat down or I do burn things.  

Last week when we had the annual inspection of our unit, I mentioned that the oven didn't regulate the heat properly and I had to make adjustment when I bake.  She made a note of that, and a few days later she told me they have ordered me a new stove.

Maybe they thought I'd stop baking cookies with an oven that was not predictable.  HaHa.  I'm thrilled so I may have a new stove when I get back from my trip.

In the meantime...we can handle a few crusty edges!!  btw I used my new Teflon bread pan.

  1. Oh, I'm happy that you'll get a new stove! I've had a few that did not heat properly and it's frustrating. Love your new pan and the bread sounds/looks very tasty. Nothing better than a cup of coffee with a slice of sweet bread. I know you are excited about your upcoming trip. xoxo

    1. To my surprise......the new stove was delivered this morning....and the first batch of chocolate chip cookies turn out perfection!

    1. Sue God is so good to me. Blessings on top of blessings...the stove was delivered this morning, and it's an upgrade and really nice. First batch of cookies....perfect...When this stove says 375 it means it..HaHa

  6. I am laughing! The Villa Board probably had a top-secret, urgent meeting with members in a frenzy crying, "New stove for Wanda, or we don't eat!" And it was stamped "Approval" immediately. Minions were then dispatched at top speed to source and buy said stove. A van was hired to drive at top-speed with police escort and, post haste, Wanda's stove was delivered to the treehouse. A sigh of relief went up from the villagers. All was well in the land. They would have their cookies! The End.

    1. Oh gosh, Suza.....now I'm laughing. That is the cutest story ever, and there may be a bit of truth in it. I sure had a group of cookie people at my door today, and not just kids....HaHa. Thanks for always making my day!!! Hugs.

  7. I'm happy for you to get a new stove. Especially since you are considering a little cooking class. I have a recipe for zucchini muffins which has raisins and pecans in it. They are good. Have a wonderful time with your sister. I'm sure your husband will be missing you.

    1. These would have made good muffins too. Maybe I'll do it that way next time. Those would be easy to freeze to.
