LASAGNE SUBSTITUTE


I've been in the mood for Lasagna for a long time, but never have all the ingredients.   I had picked up a box of lasagna noodles so I figured I could do some substitute.

Recipe calls for Italian sausage ~ I used hamburger
Recipe calls for Ricotta cheese  ~ I used cottage cheese
Recipe calls for canned tomatoes 
and tomato sauce                        ~ I used Marina Sauce

Wanted to use up some of the fresh zucchini so grated two cups and added it to the cottage cheese Parmesan cheese and eggs.

It made a huge casserole....We ate a delicious dinner, and I have two containers left over and frozen for another time.

  4. Sounds delicious! I love lasagna - but Louis Dean does not. I still make it every once in awhile anyway!!
    I try to use up all our leftovers too. It pains me to waste anything!

    1. It turned out really good, and the zucchini really was a good additions. My Don loves it...but it's so full of calories....I don't make it often either.

  6. I don't make lasagne often either because I don't always have ricotta cheese on hand and I always use hamburger and spaghetti sauce. It does make enough and I always freeze the leftovers for a later time. Your sounds really good.

    1. I like the taste of sausage, but never have it on hand, and it can really be an expensive casserole make from the recipe.

  8. My dear Wanda, I can't tell you how often I have used this recipe for lasagna.... Often, my husband will comment that he likes it better with the cottage cheese :)

  9. we always use cottage cheese,because its cheaper here but I think the grated zucchini sounds like a great addition! I use just pasta sauce like hunts or Ragu and hamburger, I never use sausage, so your lasagna is very much like ours!! I like the thought of mixing tin tomatoes or fresh with the sauce but I never do, I have lasagna in the freezer ight now , we slice it in servings and freeze them so we can have just a piece when we want one, it freezes so well. Yours look delicious!!Have a super duper weekend,,
