ZUCCHINI EGG BAKE


Breakfast is my favorite meal.  Bring it on for breakfast, lunch or dinner.  I get bored with the usual breakfast I make so this morning I jazzed it up a bit with  a Zucchini Egg Bake.  Click for the recipe.


It's a simple recipe from Taste of Home and doesn't involve crust.    My dearest likes a little salsa and sour cream on his.

  1. That looks really yummy! I don't think I have a favorite breakfast because I love all breakfast food..eggs, sausage, pancakes, waffles, pastries...fruit..yogurt...hahaha...I also love any of that for supper.

    I'm going to have to try the salsa and sour cream like Don....sounds good!

    1. When I was growing up, mom would make waffles or pancakes for dinner and I loved it. Later, she shared those were nights when we didn't have any meat. She was so good at making every meal a treat.

  2. How fun is breakfast at YOUR house???
    Louis Dean loves breakfast and cooks up bacon and eggs and sausage and home made biscuits.
    We eat brunch most days - neither of us usually eat during the normal breakfast hours - so this recipe would be perfect!!!!

    1. I've seen LD breakfasts on your blog..and drooled! The quads might like this too. You can eat it cold with your fingers...I do that in the afternoon with the leftovers. HaHa

  4. As the above Linda said, we dont eat breakfast the norma/usual hours, so ours is brunch also. Your recipe looks so good. Thank you for sharing.

    1. This is almost like quiche, without the crust. I like brunch too. Egg dishes, fruit and muffins. Yummy.

  5. Ummmm looks yummy and it does look like a quiche. Never gave much thought at using veggies for breakfast, I just eat the usual, toast or cereal, sometimes just stewed prunes & a bagel with cream cheese, which is what I had this morning.

  8. Thank you for sharing that recipe, Wanda. Lately, my favorite breakfast has been:
    2tsp coconut oil
    BIG handfuls of spinach... sauted
    2 eggs (could use whites)
    and then a diced fresh tomato

    1. I do the spinach too, but usually use olive oil. Love spinach..use it a lot.

    I had my usual Special K cereal and coffee. Rather boring though.
