DINNER AND DESSERT


 Tried a new recipe tonight for crusted cod using panko bread crumbs.  Turned out real nice and crusty.  Baked sweet potato and broccoli.  (Nice healthy dinner, smaller portions)  Trying to be good!


We were so good for dinner, we decided to have dessert.  I made that delicious coffee cake using lemon zest and black berries.  With a hot cup of coffee...perfect!  (It had fewer calories as I didn't add my famous drizzle ~ now that was hard.)  HaHa

It's so nice to be back in my little kitchen.  I have enjoyed my time there today and my dearest also enjoyed the results.

    1. We enjoyed a slice with coffee last evening. The recipe calls for blueberries...but I love blackberries so made the substitute.

  4. That looks wonderful. I do the same thing...smaller portions so I can have a little dessert, too. Panko makes the perfect crunchy breading...looks sooo good!

    Having the big kids over for dinner tonight. Always fun to cook for a bigger group around the table.

    1. I had never used "panko" bread crumbs. Wow, what a difference from ordinary bread crumbs. I'm hooked.
      Small portions is the key....Have fun with the "big kids."

  7. I know sometimes it's hard to be good with our eating habits. That did look like a healthy dinner. Your dessert looked like the perfect way to top it off too.

    1. Smaller plates help with the smaller portions. At least it looks like we're getting a plate full. The dessert...was perfect!

  9. My Tuesday was great, so was today. Baseball yesterday and picture editing today. The dinner looks great, I'll take the cake too....with drizzle.

      Just let you in on a little secret. I added drizzle to the last half of the coffee cake....Shhhh.

  10. I use panko on everything! Ha!
    It is also excellent on chicken, pork chops and of course fish!
    I add Cajun seasoning....delish!
    If you have buttermilk...as you keep making that scrumptious cake.....marinating fish or chicken in that, adds so much tenderness....try it!
    That dinner looks fantastic...good for you, with the smaller portions...wish I could lose a few lbs!

    1. I'm so glad I found panko...I will try it on everything too.

      If you don't have buttermilk on hand, 1/4 cup half and half and 1 tablespoon apple cider vinegar makes butter milk.. the more you need just add the milk and vinegar.
